A white box is not a deletion
The quick way to "remove" text from a PDF is to draw a white rectangle over it. It looks right on screen, but the words are still in the file: select the area, press Ctrl+F, or copy the page, and they come straight back. That is how "redacted" documents keep leaking names and numbers.
Overtype removes the text from the page's content stream — the instructions that draw the page. The draw operation for that line is found and replaced by an empty space of the same width, so the rest of the line stays exactly where it was and the old words cannot be found, selected or copied.
How to delete text from a PDF
- Open the PDF above.
- Click the line and delete the words you do not want — or type replacements.
- For things that are not text (a stamp, a logo, a scribble), use Erase and drag across them; they are painted over with the page's own colour.
- Save. The report lists every line and says plainly if any text could only be covered, not deleted.
When text can only be covered
A few cases cannot be deleted with certainty: text on a scanned page (it is a picture), text inside a nested form object, or a draw operation whose position cannot be tracked. Those are covered instead, and the save report names every one, so you never have to guess whether sensitive text is still in the file.

Is the removed text really deleted from the PDF?
For normal text, yes: the draw operation is removed from the page content, so the words cannot be searched, selected or copied. When that cannot be done safely, the line is covered and the save report says so.
Can I remove a logo or a stamp?
Use the Erase tool and drag across it. It is painted over with the sampled page colour; the report tells you it was covered.
